Roasted carrots, honey, and warm spices come together in a creamy, flavorful spread that feels both comforting and elegant—ideal for sharing before any autumn meal.
Honey Roasted Carrot Dip
Ingredients
- 3 large carrots, peeled & cut into small dice
- 15.5 oz can chick peas
- 2 Tablespoons honey
- 1 garlic clove
- 3 Tablespoons olive oil, divided
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- About 3 sprigs of fresh thyme
- Salt & pepper
To make:
Preheat oven to 400 degrees F.
Place diced carrots into Peugeot ceramic baker. Top carrots with the honey, about 2 teaspoons of olive oil, 2 sprigs of fresh thyme, salt and pepper.
Roast in the oven for about 25 minutes or until carrots are fork tender.
Once carrots have softened, remove from the oven and set aside to cool for about 10 minutes.
To a food processor, add the carrots, chickpeas along with their liquid, garlic clove, the remainder of the olive oil, paprika, and cumin.
Mix on high, until it becomes smooth and creamy.
Before serving, taste and adjust seasoning.
To serve, garnish with fresh thyme if desired. Serve with crackers on the side. Enjoy!
