American Snickerdoodle Cookies

Ingredients
For the dough:
– 400 g plain flour
– 200 g caster sugar
– 100 g soft brown sugar
– ¼ tsp freshly ground nutmeg
– ¼ tsp freshly ground cinnamon
– 1 tsp baking powder
– ½ tsp fine salt
– 250 g unsalted butter
– 3 eggs
– 1 tsp vanilla extract
For the flavoured sugar:
– 50 g caster sugar
– 1 tsp freshly ground cinnamon
– ¼ tsp freshly ground nutmeg
Preparation
Preheat the oven to 220°C/430°F.
Sieve all the dry ingredients into a large bowl: the flour, sugar, spices, baking powder and fine salt.
In another large bowl, beat the melted butter, 3 eggs and vanilla extract.
Pour the egg mixture into the flour mixture and use a wooden spoon to combine the ingredients until you obtain a ball of dough.
Line two oven trays with parchment paper. Form small balls of dough and roll them in the flavoured sugar mixture. Arrange on the oven trays, making sure that you leave sufficient space between each ball. Bake for 8 to 9 minutes. After removing from the oven, leave on the tray for a further 5 minutes (the cookies will continue cooking slightly).
Once warm, allow them to cool completely on a rack.
