Zero-Waste Leek, Potato, and Burrata Soup

Ingredients:

  • 1 whole leek (about 250g)
  • 350g potatoes
  • olive oil
  • 1L vegetable broth
  • 1 burrata cheese
  • salt and pepper
  • fresh or dried basil
  • pumpkin seeds
  • toasted bread

Preparation:

  1. Wash the leek and potatoes (keep the skin on) then cut them into medium pieces.
  2. Heat a large saucepan with a drizzle of olive oil and brown the leek and potato pieces for about 10 minutes.
  3. Then add the broth and simmer for about 30 minutes.
  4. Once cooked, add the burrata, salt, pepper, and basil, then blend using a blender or immersion blender. Strain the mixture if desired.
  5. Enjoy piping hot with pumpkin seeds and toast!
