Zero-Waste Leek, Potato, and Burrata Soup
Ingredients:
- 1 whole leek (about 250g)
- 350g potatoes
- olive oil
- 1L vegetable broth
- 1 burrata cheese
- salt and pepper
- fresh or dried basil
- pumpkin seeds
- toasted bread
Preparation:
- Wash the leek and potatoes (keep the skin on) then cut them into medium pieces.
- Heat a large saucepan with a drizzle of olive oil and brown the leek and potato pieces for about 10 minutes.
- Then add the broth and simmer for about 30 minutes.
- Once cooked, add the burrata, salt, pepper, and basil, then blend using a blender or immersion blender. Strain the mixture if desired.
- Enjoy piping hot with pumpkin seeds and toast!
