Pepper and Caramel Melon with Goat Cheese
Serves 6
Ingredients:
½ watermelon
300g fresh goat cheese
100g crème fraîche
Brown sugar (as needed)
Apple juice (as needed)
Peugeot pepper Red meat mix
Mint
Preparation
Scoop out watermelon balls with a special spoon (melon baller), or form into cubes.
Put the brown sugar in a shallow pan and caramelize.
Add the coarsely ground Peugeot pepper to the pan and glaze with the apple juice. Do not stir the mixture, but let it simmer until the sugar is dissolved.
And the watermelon balls and lightly simmer.
Mix the goat cheese and the crème fraiche into a cream and season with salt, pepper and mint.
Pour the cheese and cream mixture into a piping bag fitted with a fluted tip.
Serving
Arrange the watermelon balls (2 rows of 4) on a plate and place a row of cream cheese balls between each.
Top with the remaining pepper caramel and garnish with fresh mint.
